Ingredients
- 240 grams Greek Yogurt
- 200 grams pumpkin puree
- 2 whole eggs
- 2 scoops vanilla whey Isolate
- 60 grams all purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1.5 tsp Pumpkin Spice
- 1.5 tsp Cinnamon Powder
Instructions
..1. In large bowl whisk Greek Yogurt, Eggs and Pumpkin Puree together
2. Add pumpkin spice powder, cinnamon, and protein powder. Whisk together.
3. Add baking powder and baking soda. Whisk together till batter is smooth
4. Add flour. Whisk together just till combined. Allow batter to rest 5 minutes.
5. Heat up large non stick frying pan or pancake griddle on medium heat. Butter or oil pan.
6. Scoop out batter using a half cup measure. Batter will make 4 large pancakes.
7. Fry up all pancakes and serve immediately.
