Ingredients

 

  • 3 cans solid white tuna (5 oz. in water)
  • 1 can cannellini beans (15 oz.)
  • 15 gram extra virgin olive oil
  • 60 gram nonfat Greek yogurt
  • 25 gram stone ground Dijon mustard
  • 2 medium dill pickles
  • 2 stalks green onion
  • 1/2 lemon juiced
  • 1 handful fresh Italian parsley
  • 1 tsp dried dill
  • 1 tsp cumin
  • 1 tsp sweet paprika
  • fresh cracked pepper
  • 1/2 tsp Himalayan sea salt

Instructions

1. Strain and rinse canned beans and put into medium mixing bowl

2. Drain tuna and add to beans

3. Finely dice pickles and onions add to bowl

4. Add chopped fresh Italian parsley and all spices

5. Add extra virgin olive oil, lemon juice, mustard and yogurt

6. Mix together with large fork

7. Serve immediately or store in air tight container for up to 5 days

Notes:

  • Makes approximately 28 oz. salad. Serving Size = 7 oz.
  • Serve this alone, on flatbread or Wasa Cracker
